Just type gconf-editor in your terminal and enter
then you will see configuration editor

Click apps and then nautilus

then click desktop and set the volumes_visible to false by unticking.
then close it.
Now you will see no mounted volumes in the desktop visiable .

* Note : I tried this in ubuntu 7.10.
